Runebergcakes

In Finland we usually eat Runeberg´s cakes 
to celebrate Runeberg´s day (February 5th).

Ingredients:
1               egg

1 dl    sugar
1 dl    wipping cream
50g    ground almonds
125g  melted butter or margarine
1 dl    crumbs of gingerbread biscuits
1 dl    crumbs of ryebread
1 dl    breadcrumbs
1 dl    wheatflour
1 tsp  baking powder

Garnich:
Raspberry jam
1 dl icing sugar
½ tbsp water

 

1.      Melt the butter and let it cool down. 
Mix the baking powder and the wheatflour. Then 
add the other dry ingredients.

2.      Beat the egg and the sugar.

3.      Add the cream and the butter.

4.      Put the dry ingredients into the mixture.

5.      Pour the mixture into small round 
dishes until they are half full.

6.      Bake the cakes in low temperature 
until they rise, then in 200 Celsius for 
about 15 minutes.

7.     Let the cakes cool down.Decorate 
them with raspberry jam and 
glazing of icing sugar and water.
