Doughnuts

People believe that masks can chase the evil and the winter away. When we put masks on we can say and do whatever we want to because nobody recognises us. The most known Slovenian masks are "kurenti" and the most popular food are doughnuts.
"Kurenti" are the most interesting and famous masks in Slovenia. They wear coats from sheep fur and have bells around their belt. On the head they have a lot of ribbons and on the face a scary mask. They collect handkerchiefs and the best ones collect a lot of handkerchiefs. In the hand they hold a special stick.

We need:
 1 kg flour
 80 grams of yeast
 ½ l milk
 2 eggs
 1 tea spoon of salt
 4 yolks
 80 grams of sugar
 4 spoons of oil
 4 spoons of rum
 a lemon peel

We put the yeast in the milk and let it warm in a warm place. We mix yolks, eggs and sugar and add a grated lemon peel. After warming the milk and the yeast we pour some rum into it. We knead it for some time. We cover the bowl with a napkin and put this on a warm place. We let it rise for some time and then shape then doughnuts. We let them rise again and fry them in the hot oil. We can decorate them with sugar.
