The Truffle is a symbol in the Périgord and it has its capital Sorges with
its museum of man and his environment.
It is one of the rarest and most expensive mushrooms. We can buy them at
the market from December till February. |

Truffles are a kind of underground fungus which grow in temperate and wet
areas: indeed they are very sensitive to the cold and the frost. We find
them around the roots of truffle trees such as oaks at a depth of about 15
centimeters. |

Some people used to find truffles thanks to flies. It is Tuberiperda.
Today animals such as pigs and dogs from different breeds find these
mushrooms. We call this search “Cavage”. |

These dogs are bred to look for candies then both candies and truffles and
finally truffles only. When they have done a good job they are rewarded
and given candies. |
There are special events such as ”cavage” competitions:
truffle dogs must find as many truffles as they can in the shortest time
possible.

When the animals do not succeed in finding them, their masters do their
job to avoid coming home empty-handed!
More seriously, the people who have a keen sense of smell and a perfect
knowledge of the barren ground can smell them out since their aroma is
quite strong and typical. |
