Ingredients:
5l water
0.5tsp. salt
0,5kg malt
6 tbsp. Seville orange
1,25kg rye flour
Directions:
Mix ¼ of the malt and some rye flour in 1l water. Cover the surface with
a thick layer of malt and rye flour. Cover the saucepan well and put in a warm
place for 1 hour. Beat the mixture well and add some water. Cover the surface
with malt and flour once more and leave to sweeten for about 1 hour. Repete this
until all the ingredients have been mixed in. The water should be boiling hot at
the end. The mixture is then boiled and spiced while stirring it. Beat the
mixture until it is cooled off. Memma is put into low, square cardboard boxes,
looking like birch-bark, (They used to be made of birch-bark.) and are baked in
the oven for about 3 hours until they are dark brown. Serve with milk or cream
and sugar.
On Good Friday theaters are closed and cinemas open late. TV programs send to be
serious and also the music played on the radio. Today dances can be held in the
evening, depending on the region. Easter holidays are very short. Schools finish
on Maundy Thursday and start again the following Tuesday, which means a 4-day
holiday.
