Ingredients:
3 quarters of a pigs liver
quarter lb (115g) of pork
1 egg
half an onion
pig's caul
bread crumbs
nutmeg
sage
thyme
basil
salt
pepper
Instructions:
1) Chop up the liver and onions finely
2) Cut the pork into small dice
3) Put in a saucepan together with liver and onions
4) Add salt pepper, sage, thyme and basil to taste
5) Cover and cook on a low heat for 30 minutes (do not brown)
6) Drain off any fat, leave to cool slightly
7) Beat and add egg, and nutmeg to taste
8) Add sufficient bread crumbs to make a fairly stiff mixture, mix well
9) Add mixture into a well greased baking tin, cover with caul
10) Bake in a moderate oven for 30/40 minute, or until nicely brown, and cooked
through
11) Remove from tin and cut into squares
