Ingredients:

1 wild Duck
2 teaspoons of softened Butter
1 glass of Red Wine
1 Orange, squeezed out
Salt and Pepper
1/2 glass Brandy

 

Method of cooking:

Smear the bird with butter and roast in a moderate oven, 375 F, for 15 minutes. Add the red wine, the juice of the orange, salt and pepper, Roast for another 15 minutes. Reduce the gravy down, while keeping the bird warm. Mix in the wine and brandy just before serving.
