Plum Pudding from Castle Lambert

Ingredients;
Beef suet
Sugar
Bread crumbs
Currants
Raisins
Candied peel
Mixed spice
Salt
Flour
Eggs
Baked apple
Whiskey

A few weeks before Christmas my mother makes some plum puddings. We go to the town of Athenry to buy the ingredients.
When we get home I like to help her make it. I love to prepare the breadcrumbs - a big basin full. I help her to weigh the right amounts of ingredients and when we have them all ready in the bowl we mix it with a big wooden spoon. This is what I like and now and again I take a little on my finger to “taste it”. My brother Michael tries to “help” also but my mother promises to give him the bowl afterwards. When the mixture is ready we put it into small bowls, cover with greaseproof paper and boil in big pots. The puddings are then stored until Christmas.
I love when we are making the Puddings and I love to eat Plum Pudding.
