Tomato and Onion Salad in Balsamic and Hazelnut Dressing
My mother uses the Hazelnuts we gather in the wood in this way! – Keira

 

Ingredients: 
10 medium ripe tomatoes
2 medium onions, very finely choppy
2 tablespoons hazelnuts
4tbs Olive oil
1 tbs balsamic vinegar
1 tablespoons fresh lemon juice
1 garlic clove, crushed
Salt and ground black pepper
2 tablespoons chives, chopped

Method:

  1. Slice tomatoes thinly and arrange in a salad. Bowl with chopped onion sprinkled on top.

  2. Roast hazelnuts for a few minutes until golden. Take out of the oven and rub it off skins with a dry cloth. Grind thoroughly in a food processor.

  3. Make the dressing by whisking or shaking together the oil, Vinegar, lemon juice and garlic. Season.

  4. Add chopped chives and ground hazelnuts to the dressing, whisk again and pour over the tomatoes and onion

This makes approx. 4 portions
Oven Temperature - 200ºc /400ºf or gas mark 6
