Ingredients:

9 - 10 lbs of Ham
1 Carrot
1 teaspoon Celery Salt
1 sliced Onion
1/4 cup of Vinegar
2 Celery stalks
3 Parsley sprigs
2 - 3 Bayleaves

Method of Cooking:
Place the ham in hot water to cover. Add all the rest of the ingredients. Cover. Simmer for 4 to 5 hours - (25 minutes to each pound). Test with a skewer and turn to cook evenly. Add water when necessary to cover.
When the ham is cooked, remove the rind, score the fat and stud with cloves, spread with orange glaze and place in the oven for  and bake for 15 minutes.

Sweet orange glaze:
Mix the grated rind and juice of 1 orange with 8 oz. of Brown sugar).
