Roll out pastry a little bigger than pastry dish. Leave in
a cold place while pre preparing the filling.

Peel core and slice apples. Put into pie dish, Sprinkle
with cloves and sugar in-between. Add a little water.

Cut a stripe of pastry about 1\2 inch wide. Damp around the
edge of the pie dish. Place the strip on edge of pie
dish with the cut edge to the outside.

Brush stripe with cold water. Place the remainder of the
pastry on the pie dish, easing it over the pie dish.

Press edges well together. Trim with sharp Knife, Flake and
decorate the edges.

Stand pie dish on a tin, and bake in a hot oven for the
first 8-10 minuets.
Reducing the heat until pie is cooked about a 1\2 an hour.

Brush the top over with egg. Dredge with castor sugar.
Return in to oven until nicely brown.

Dust with castor sugar and serve.
